OUR SECRET RECIPE
We cook our octopus with love and dedication following a traditional family recipe that has been passed from generation to generation since 1956. A recipe that turns our cooked octopus into a gastronomic experience that fuses our history and traditional flavor with craftsmanship in its preparation.
Our secret: double cooking
We start with a traditional cooking in kettles with water and bay leaves, an ingredient that infuses its essence in each octopus.
But the best kept secret lies in the second cooking. This is where the octopus reaches its maximum potential and increases its shelf life. The result is a smooth texture and intense flavor that make it an octopus of high gastronomic value.
The presentation of our product can be in vacuum thermoformed bags or in vacuum thermosealed trays. Both formats are pasteurized at 90°C after packaging to increase their shelf life and are ready for direct preparation in the microwave, bain-marie or in a frying pan before consumption.
Although the shelf life of our fresh cooked octopus product is excellent, we can flash freeze it with liquid nitrogen reaching temperatures of -70°C in 20 minutes. This process preserves the octopus without any impact on its texture.


OCTOPUS OF DAKHLA ORIGIN, THE BEST FISHING GROUND IN THE WORLD
Our octopuses are fished in the Western Sahara Coast area, between the cities of Dakhla, (Morocco) and Nadibu, (Mauritania) in FAO 34. The most recognized and prestigious area for catching this species, which provides a perfect ecosystem for the octopus to develop with unique hydro-climatic conditions.
The Moroccan octopus, and specifically the one from this fishing ground in Dakhla, stands out for its quality and stability. For this reason, at Alondra Seafood we only work with octopus traditionally fished in this area to produce a unique handmade cooked octopus for its texture and intense flavor.
